Rainbow cupcakes

    CUPCAKES.......those wonderful, tiny delights topped by an gorgeous swirl is my all-time-inspiration. I love to experiment with cupcakes, but running almost an nuclear family, restricts me to bake  twice an month.  And with not-so-cream loving hubby, I had to opt for an minimal or no-creamed cupcakes.  So, once when I came through sour rainbow strips in an super-market, I really knew what to make from them.... :D  :D  Do check out my other cupcakes collection.... Rainbow-themed cupcakes, which can also be smeared by blue coloured buttercream, topped with white buttercream swirls with rainbow crossing over, is an perfect party food and would please any kid with an summer boredom :)  I avoided blue buttercream, and replaced it with an blueish cake batter, thus my icing-usage was reduced, an fact to satisfy my hubby's soul :D





The cupcakes, made here are eggless, were super-soft and spongy.  I loved them totally and we all enjoyed it with utmost pleasure.  

Preparation time: 20 minutes
Baking time: 15-20 minutes
Yield: 16 mini cupcakes

Ingredients required:

For cupcakes
  • 1 1/4 cups APF/ All purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 cup condensed milk
  • 1/3 cup softened butter
  • 1/3 cup water
  • 1 tsp vanilla essence
  • Few drops of blue icing gel

For icing


Method


Pre-heat the oven for 180 degree celsius.
For cupcake batter, mix flour, baking powder and soda.  Sieve them thrice and reserve it.  In another clean bowl, mix condensed milk, butter, water and vanilla essence.  Mix properly and stir in dry mixture in almost, three batches.  Mix gradually and stir in blue icing gel through toothpick.


Do not over-mix.  You can add more icing gel colour for an brighter colour.


Pour them over paper-lined  cupcake moulds, bake for 15-20 minutes or till done.



Cool them completely over wire-rack.  You can arrange them in two ways.  First, either you pipe buttercream onto two sides and insert rainbow strips over each side.  Or, you can pipe cream on middle and attach strips around the two ends.  Either way, refrigerate after doing so that strips may get attached firmly to buttercream.
