Rainbow ruffle cake

Initially, when I took to baking, I would search all types of cakes available online.  The one cake, which would impress me the most is this rainbow cake.  For long, I had been thinking of making this and surprising my kid, but as routine life goes on -this cake remained as an sweet memory inside my heart.  Now, when Swathi Iyer  and Julie announced this month's challenge, I almost jumped with joy! Yes, the challenge to bake my sweet-heart cake!



This cake needs an lot of patience, to bake each layer and also to assemble them.  I flavoured green layer with pista, red with strawberry  (which went according to the recipe source provided) and orange, yellow went with orange and mango fruit juices.  Rest I made as plain sponge and coloured them.





As soon, I started assembling them, I could see an huge tower of cake, to be feasted.  :)  I used Tropolite cream for frosting.




Each and every slice was delecious with whipped cream frosting.  As expected, my kid was very excited.  :)  At the end, that is all what every baker wants, to get amazed by their pretty hero's and heroine's of their life, isn't it?  :)

Preparation time: 60 minutes
Cooking time: 10 minutes (for strawberry puree)
Baking time:  20 minutes, each batch. Total, 60 minutes
Assembly time: 45 minutes
Serves:  10-12

Ingredients required:

For voilet layer

  • 1/2 cup All purpose flour
  • 1 tbspn cornflour
  • 3/4 tsp baking powder
  • 2 tbspn butter
  • 1/4 cup sugar
  • 1/2 tsp vanilla essence
  • Half of an egg (For this, beat one egg and separate them into two - use these batchwise for each layer)
  • 1/2 cup water
  • Pinch of voilet colour

For blue layer

  • 1/2 cup All purpose flour
  • 1 tbspn cornflour
  • 3/4 tsp baking powder
  • 2 tbspn butter
  • 1/4 cup sugar
  • 1/2 tsp vanilla essence
  • Half of an egg
  • 1/2 cup of water
  • Pinch of blue colour

For green layer
  • 1/2 cup All purpose flour
  • 1 tbspn cornflour
  • 3/4 tsp baking powder
  • 2 tbspn butter
  • 1/4 cup sugar
  • 1/2 tsp vanilla essence
  • Half of an egg
  • 1/2 cup of pista puree ( pureed 1/4 cup of pista with 1/4 cup milk)
  • Pinch of green colour
For yellow layer
  • 1/2 cup All purpose flour
  • 1 tbspn cornflour
  • 3/4 tsp baking powder
  • 2 tbspn butter
  • 1/4 cup sugar
  • 1/2 tsp vanilla essence
  • Half of an egg
  • 1/2 cup of mango juice (or mix 1/4 cup of instant Tang mango powder with 1/4 cup of water)
  • Pinch of yellow colour
For orange layer
  • 1/2 cup All purpose flour
  • 1 tbspn cornflour
  • 3/4 tsp baking powder
  • 2 tbspn butter
  • 1/4 cup sugar
  • 1/2 tsp vanilla essence
  • Half of an egg
  • 1/2 cup of orange juice ( or mix 1/4 cup of orange instant powder with 1/4 cup of water)
  • Pinch of orange colour
For red layer
  • 1/2 cup All purpose flour
  • 1 tbspn cornflour
  • 3/4 tsp baking powder
  • 2 tbspn butter
  • 1/4 cup sugar
  • 1/2 tsp vanilla essence
  • Half of an egg
  • 3/4 cup of strawberry puree (Cook 75 gm of strawberries with an tbspn of water and sugar each till they get mushy, cool and blend)
  • Pinch of red colour
Frosting
  • You will need 8 cups of whipped cream, from 21/2 cups of tropolite liquid cream
  • Also different gel colours for ruffle design
Above said measurements are baked in 6 inch circular cake pan.

Method


Pre-heat oven to 180 degree celsius, take your dry ingredients together ie flour, baking powder, cornflour and sieve them thrice, keep them aside.  Add butter and sugar in an separate bowl and cream them together.  


Add essence and egg.  Now add pista puree and dry mixture alternatively and mix them till an smooth batter is obtained.  Add pinch of green colour.




Pour them into greased cake pan and move this to hot oven.


Bake for about twenty minutes.  Later, invert them over wire rack and let this  cool completely.


For red layer, cream butter and sugar followed by essence and egg.  


Now add strawberry puree and dry mixture alternatively.  Add colour, if desired.


Bake them similarly, and keep aside.  


For yellow layer, cream butter and sugar along with essence.  Add egg and mango juice.  Slowly add dry mixture and mix them gently.


Adding yellow colour and baking them.




Similarly, I baked rest of layers like voilet, blue, orange and kept them aside. 

Assembling the cake:


First cut the dome part of cake, place voilet colour layer over turn table and spread about half an cup of frosting over the top.




Sandwich them with blue layer, again spread with cream.




Stack this with green layer , and then cream.


Follow the pattern, till cake layers gets assembled


Now start covering the sides of cake with whipped cream and refrigerate.



I  piped the remaining whipped cream  as colourful ruffles over the top.
